Advanced Pastry Skills (CUL 252)
Term: 2024-2025 AY - Spring Semester
Designed to build on the skills and knowledge gained in Baking and Pastry I, the course will emphasize advanced preparations including cakes and icings, chocolate work, specialty tortes and petit fours, and plated desserts. Students will practice presentation and decorating techniques that will include dessert sauces, decoration, plating and garnishment.
